Based on this recipe, my friend Cecilia introduced me to this soup. This can be done in a slow-cooker or on the stove and it freezes really well. Here is our variation.

2 tablespoons red curry paste

1.5,12 ounce cans of coconut milk

Tear up some spinach leaves and place in large bowl

Slice strawberries and place on spinach

Sprinkle pecans over the top

Slice bananas onto the salad at the last minute 

Drizzle Sweet Balsamic Vinaigrette over and serve.

Best with Spinach Banana Salad:

2 TBSP melted honey

1 TBSP maple syrup

1/4 cup olive oil

3 TBSP  balsamic vinegar

1 TSP sesame seeds

1 TSP poppy seeds

dash of worcestershire sauce

dash of salt and pepper

I make this a few times a week. Switching up the veggies keeps the dish novel. I eat the leftovers for lunch sometimes.

Almost any vegetable with work in the recipe. You just want to end up with 4 cups of chopped raw, peeled vegetables. You can have 2 kinds or veggies...

2-3 pounds of salmon.

4 TBSP maple syrup
3 TBSP soya sauce
1 clove chopped garlic
Dash of pepper

Put salmon in casserole dish and pour ingredients over top. Bake uncovered at 350 till salmon flakes with a fork (15min).

Jerry & I were married in August of 2002 in the Cardston Alberta temple. It snowed that morning, and our life together has been full of unexpected surprises ever since. We have a lot of fun, which helps balance out the inevitable challenges of raising a big family while managing the unpredictable Realtor hours that go with my husband's profession. I'm a five time veteran of childbirth (that's 15 trimesters, what was I thinking?), and I now hope to survive raising them all. We go through a lot of food, break a lot of iPhones and travel as much as possible.
